How likely is it for luggage to get lost or stolen at an airport?

As far as luggage being lost, well, it happens, but most of the time it doesn’t. Even if it does it can usually be returned to you within a day or two. You don’t really hear of luggage itself being stolen all that often, but items IN luggage you do hear about getting stolen, particularly by baggage handlers. I seriously doubt they would steal your clothes, but things like electronics, jewelry, credit cards, cash, etc. would be vulnerable. That’s why you should carry-on anything of value, NOT pack it in checked luggage. I really wouldn’t stress out about it.
