What do you do with your luggage in this situation?

Leave it in the car. That’s how it was getting to the airport anyway.
Did you ask the hotel if they would keep it for you? Many hotels have storage areas for people in your situation. If they say no, you may want to book an extra night so you can take showers after the beach and keep your luggage safe.
Usually, the hotel will have a place you can stash it, like an office, or behind the front desk. Just call and ask.
Speak to the hotel concierge. They often store luggage for guests. Otherwise, get a locker at the airport and store it there until you can go back and pick it up later for your flight. You can always check it in at the airport if they will take it that early, but then you risk it sitting at the airport getting lost by the baggage handlers and ending up somewhere else.
You have 3 options:
1. Ask the hotel to keep it for you and then you pick it up after sightseeing.
2. Take it with you and keep it in the car while you sightsee. Although you sound like this is not one of your options. Are you using public transportation to get around?
3. Check it in at the airport early and then go sightseeing.

Are you sure you can’t leave it at the hotel? because a lot of hotels these days offer a service where you check out of your room, but then they’ll keep your luggage in a store room while you go sightseeing. Ring your hotel to ask for details. I’m sure they can’t expect you to hang around all day doing nothing.
I really don’t think leaving your luggage in a car while you wander off is a good idea, neither is dragging your luggage around with you.. bit unrealistic.
