Where abouts at gatwick airport do they weigh your hand luggage?

it is check in. But, in duty free (which is after check-in) you can buy usually as much as you like, unless it isn’t more than 100ml of liquid.
they weigh your bag at check in, and once you pass through security you can buy as MUCH as you like inc liquids as once you have passed through a security search area every thing you buy has been approved for you to carry on as hand luggage.
